Sometimes it takes many stars to create a single hit, so think of Medium Rare in Cleveland Park as the “We Are the World” of restaurants. The eatery is owned by BGR: The Burger Joint’s Mark Bucher and Tom Gregg; chef Michel Richard worked on the project; Brian Zipin (who was last at Ray’s: The Steaks) is the general manager; and consulting chef Cedric Maupillier (formerly of Central Michel Richard) perfected the steak, frites and salad that make up the micro-menu at this dinner- and brunch-only bistro.
The Vision: After eating their way across the City of Light, Bucher and Gregg (who was living in Paris at the time), decided that the single-item restaurant concept — such as an eatery that sells only crepes, which is hugely popular across the Atlantic — could be successfully translated for an American clientele. “A lot of people continually return to the same restaurant for the same dish,” Gregg says. “I always order the pad thai when I go for Thai food. Since steak is well loved across the board, we thought that dish would work well here.”
