Plate’s Chef Shuffles for the Week of April 6

Alex Stratta is outta Bigoli after only two and a half weeks; he’s back in Las Vegas considering his next move. Chris Wyman (Oceana) is the new executive chef at ScarpettaJon Wallace (Buttermilk Channel) is heading up Thistle Hill Tavern’s kitchen, Jeremy Griffiths is now manning the burners at Bistro Lamazou, and John Cordova (Millesime) is Home’s new executive chef. Peels is losing Pastry Chef Shuna Lydon, who hasn’t yet announced what she’s doing next. Top Chef favorite Dave Martin has said goodbye to The Meatball Factory. Brothers Jason and Joe Denton (Corsino) are splitting their business partnership so Joe can move to Australia with his family.

The Asian spot Dragonfly from Cornelius Gallagher (Lespinasse), tapas joint Gastro Bar at 35th, a new location of Momofuku Milk Bar, the Bar Henry team’s Mexican venture Casa EnriqueRandolph BeerHinomaru Ramen, and STK sandwich spin-off STK Out all opened. Former Public chefs Jared Braithwaite andMonique Fiso are in charge of the New American menu at the just-opened Leyla. Cantonese chain Hakkasan opened with Michelin-starred Ho Chee Bon handling a menu that includes an $888 abalone dish. The team behind Egg opened Parish Hall.

Mile End Sandwich should be open in the next few weeks and Pizza Prince will roll out in the Schmook’s Pizza space shortly.

Devi shuttered, so Suvir Saran plans to move to Chicago, where he’ll open an Indian restaurant. Chestnut is shutting down.
